After 26 weeks of Meatless Monday recipes, I’m not quite ready to move onto Round 2 yet. The number of amazing creations submitted each week is incredible! In fact, I want to spend some time today featuring one participant’s recipe from each week.
That’s a LOT of recipes for one post, so today will focus on the first (lucky) 13; with the remaining (also lucky) 13 taking center stage next week. We’ll start the second round on April 1st, so stay tuned for all the details and the first group of ingredients!

Questions for you:
-
Which ingredient from the first half of the list was your favorite?
-
Was there a recipe that stood out to you that I didn’t highlight?

I love dates, ginger and lentils….and soaehow they all can tend to get missed for a whole. I love the reminders of ingredients that I need to bring back into circulation!

Yay – I was hoping I wasn’t the only one who wanted to reminisce a little and remember some of these amazing recipes! :)
Sorry for all the typos!! That was obnoxious. I’ll admit, I was commenting using my phone, while on the elliptical! Multi-tasking at it’s finest. ;)

Me too – what a great idea! :)
I felt weird not having a Meatless Monday A-Z recipe to post today….but I am glad you are highlighting some of the best ones (and not just because you featured two of mine ;)). I often miss many of the linked-up recipes, and now I have something to drool over and dream about all day…

Yea, it is a little weird, but hopefully that just means you’ll be excited about starting round 2 soon! :)
All this food looks amazing! I wish I was this creative.

I didn’t used to be creative either, I hated not following a recipe. You can do it! :)
like Sarah, I feel weird without a #MMAZ “assignment” today ;)
it’s nice to have a break, though I am looking forward to the next round.
I really liked UDON week, because I created (in my opinion…) something awesome that I really do make a lot now. I loved jalapeno week because… well I love jalapenos and my creation that week was another fun one. the caperberries was a fun week, being something new I had never used before.
I try to click through to every recipe each week, but I see a few here I missed… off to see them now! Happy Monday!

A few weeks off to make the heart grow fonder. :) I think Udon might have been my favorite week too – since it inspired me to make Pho at home!
Great recap – I need to check out the lentil crackers recipe since I just cooked off a bunch of lentils yesterday.

I didn’t really remember those until creating this recap either. Did you end up making them this week?
There were so many good entries over the weeks. Great roundup!

Agreed – so many talented people!
I love that you are recapping! I missed a couple of those and want to check them put. Thanks for highlighting my edamame. I had forgotten about it! Time to revisit!

Yay – I’m glad you’re enjoying the look back, as well. There are so many recipes I still want to make & it helps me remember!
We only made it to one link-up party (quinoa) this round, but I am going to try to make more for round #2! These recipes are so inspiring! I really want tot make the fig bars and lentil crackers :-)

Woohoo- glad to hear you’ll be back for round #2 – it’s going to be so much fun!
Ahh, thank you for doing a recap! I missed out on seeing some of these! I really enjoyed kale week…and I definitely got a run for my money during fig week! I am sooooo not a baker! Lol! Ohhh, if only figs could be in season year round!
I’m really hoping I can participate more with this coming round…I’ll admit, I was a little intimidated by a few of the ingredients (artichokes, hominy, and well, lentils don’t really like me so much) but I really did want to create something each week…it was just so hard to find the time to create, test, AND photograph! Maybe I can make it a plan to do at least every OTHER ingredient next round! :)

So many great looking recipes! I love the idea of vegan bacon-wrapped dates. That’s adorable!
