After 26 weeks of Meatless Monday recipes, I’m not quite ready to move onto Round 2 yet. The number of amazing creations submitted each week is incredible! In fact, I want to spend some time today featuring one participant’s recipe from each week.

Meatless Mondays Highlights

That’s a LOT of recipes for one post, so today will focus on the first (lucky) 13; with the remaining (also lucky) 13 taking center stage next week. We’ll start the second round on April 1st, so stay tuned for all the details and the first group of ingredients!

I love dates, ginger and lentils….and soaehow they all can tend to get missed for a whole. I love the reminders of ingredients that I need to bring back into circulation!

I felt weird not having a Meatless Monday A-Z recipe to post today….but I am glad you are highlighting some of the best ones (and not just because you featured two of mine ;)). I often miss many of the linked-up recipes, and now I have something to drool over and dream about all day…

like Sarah, I feel weird without a #MMAZ “assignment” today ;)

it’s nice to have a break, though I am looking forward to the next round.

I really liked UDON week, because I created (in my opinion…) something awesome that I really do make a lot now. I loved jalapeno week because… well I love jalapenos and my creation that week was another fun one. the caperberries was a fun week, being something new I had never used before.

I try to click through to every recipe each week, but I see a few here I missed… off to see them now! Happy Monday!

Ahh, thank you for doing a recap! I missed out on seeing some of these! I really enjoyed kale week…and I definitely got a run for my money during fig week! I am sooooo not a baker! Lol! Ohhh, if only figs could be in season year round!

I’m really hoping I can participate more with this coming round…I’ll admit, I was a little intimidated by a few of the ingredients (artichokes, hominy, and well, lentils don’t really like me so much) but I really did want to create something each week…it was just so hard to find the time to create, test, AND photograph! Maybe I can make it a plan to do at least every OTHER ingredient next round! :)
