Final Meatless Mondays from A-Z Reveal {Round 1}

As I write this, I’m currently devouring a HUGE bowl of Kale salad to “detox” my body from a weekend of wedding fun in South Carolina. I ate way more fried food than anyone should, especially someone who rarely eats fried food. My tummy is making me pay. It’s days like this that I remember how GOOD healthy food is, although it was a fun weekend of splurging. :)

I’m glad this ended up being a weekend off for MMAZ recipe creation, because I literally had no time. I do, however, have a great idea brewing for the next letter in the list…I did have some extra time to think while flying back and forth across the country this weekend.

Can I be a dippy copy editor? The graphic says yeast, but the list says yucca. And, if you want the edible yuca, it’s yuca, not yucca. Yuccas are ornamental plants, while yuca is cassava.

Okay, now that I’ve been a grammar brat for the day, I’m excited for Y and Z! Walnuts make my mouth feel weird, so I’ll probably skip that one (or cheat, because I’m pretty darn good at not-quite-exactly following the rules ;D ) I hope there are pictures of this fried Southern feast coming soon! Southern food will always hold a special place in my heart. And stomach. And arteries, probably.

Yes – thank you!!! I meant for it to be yeast, this is what happens when I blog late at night. :)

And honestly – no pictures of the southern feast. Remember that balance thing I’m working on? I barely had my phone in my hands all weekend!

I know EXACTLY how you are feeling. Fried food KILLS me. I also have a similar feeling when I eat too many chips. At least the good part is a rekindled love for healthy, ‘clean’ foods, right? Maybe? :)

Oh, I am indeed excited about these letters, even if my insistence that we take it into foreign language territory with Z was denied. [To be honest, I forgot about zucchini. I don't know the hows or whys of that...] 3 out of 4 ain’t bad.

I know EXACTLY what I am going to make with W. As for the others…time well tell.

And seriously, I just reread the ingredients and SWORE instead of yeast I read yucca. So I only got 50%, not 75%, but it’s OK. Yeast is going to allow me to give you a 5th grade science lesson.

It was posted this morning with one of each, until Allie corrected me. :) I am terrified of yeast – I only use it to make pizza dough… and beer… but not enough time to test a beer recipe!

How exciting! X is going to be a bit challenging- all I know about Xantham gum is that it is used in gluten-free baking! Should be a learning experience.

My stomach doesn’t do well with highly fried foods. Period :( I’m more of a carb girl vs high fat girl. I usually find that eating some vegetables after a greasy meal helps with my tummy.

Xantham gum 0.0 I’ve never heard of that. I was still secretly hoping for Xocolate :P

Yea – I remembered why I don’t eat that stuff usually – tastes good in the moment. :) Sorry I didn’t end up with Xocolate, but decided to go with the majority on that one. We’ll just have to learn more about xantham gum now!

I had pizza over the weekend. Nothing fancy, just a couple slices of yummy pizza. Always makes my tummy happy, but that means I have to run some extra miles. No problem tho, I got it.

Pizza is always a winner in my book – and it’s not always a run-inducer, there are healthy options too. But with your volume, maybe it’s a good run encourager. :)
