Silk Rethinks Pancakes

You may have noticed from my recipes that I’m a big fan of Almond Milk! It’s been my favorite non-dairy milk for years and I don’t see that changing anytime soon.

One thing you may not know is that Silk makes Almond Milk! I have always associated Silk with soy milk, but have recently learned about their Pure Almond offerings. In fact, their Unsweetened Pure Almond is the lowest calorie option on the market – at a mere 30 calories per serving! The original version is only 60 calories,  lower than the other Almond Milks I’ve seen.

Silk Pure Almond Protein Pancakes

Silk is currently hosting 30 Recipe Rethink, where they asked 30 bloggers to rethink some of their favorite recipes to include 30-calorie Silk Pure Almond. Some of my favorite bloggers have been featured, so make sure you look for Kristin (Stuft Mama), Lauren (Oatmeal After Spinning), and Laura (Sprint 2 The Table). There are more recipes being revealed regularly, so make sure you keep checking back to get all 30 recipes!

I use Silk Pure Almond for everything – from cereal to recipes. This weekend, I used Silk Pure Almond to create a variation of Heather’s Snickerdoodle Protein Pancakes.

Silk Pure Almond Protein Pancakes

I made just a few tweaks to the recipe, to make it work for my mostly plant-based diet and what I had on hand:

  • Silk Pure Almond instead of Milk
  • Extra 1/2 cup Silk Pure Almond, to balance the thicker consistency of my protein powder
  • Extra 1/2 teaspoon of cinnamon
  • Egg Replacer instead of Egg
  • Maple Extract instead of Butter Extract

I also added ricemallow fluff both between the pancake layers and on top, just to take this breakfast really over the top!

I love almond milk, but always buy Blue Diamond. I’m interested in trying Silk because I’ve heard good things, and I’d like to not rely on blue Diamond any more. I just have to hunt some down!

Sounds yummy. We are an almond milk family. I love that it’s thicker, like a fattier milk so you get the richness without the fat and calories.

Honestly, I don’t drink a lot of milk, so I tend to just buy what’s on sale, whether it’s almond or soy or sometimes regular skim.

That little syrup pourer (I’m sure that is not the proper name for it!) is adorable.

I’m not a fan of the soy flavor in milk, although I don’t mind it mixed in with things (like lattes).

That syrup pourer is the only “blog prop” I’ve purchased – got it at Crate & Barrel for like $3! :)

Having had those pancakes made directly by Heather, I can vouch for their deliciouness! Mmmm… now I wish I hadn’t already eaten.

And ricemallow fluff?! I didn’t even know that existed. Sounds amazing.

Oh right – I forgot those were created at your house!! I saw ricemallow fluff on someone’s instagram feed a few weeks ago, so you know I snapped it up when I saw it at WF. I think it’s going to be part of my strangebutgood box… :)

I have found that nothing fuels me before a workout like oatmeal (well, oatmeal + oat bran + protein powder + occasional other mix-ins). Thus, I end up eating it for breakfast and often in the afternoon as well–which, during the school year, is when I usually get to work out. :)

I used to mix in almond milk all the time, but I’ve gotten out of the habit. My preferred way to drink almond milk has actually become heated up before bed (or when I am having trouble sleeping). It is super soothing.

Mmm…oatmeal. I like it even more since I found I can make it in a rice cooker. I abuse that poor tool. :)

I’ve tried almond milk before and I liked the chocolate kind (no duh!). I’ll try this one out. Wow 30 calories 0.0 My only thing with almond milk is that it lacks protein that milk or soymilk would have. Like sure it’s low calorie but it’s not exactly high nutrition…

That’s very true about the protein – I hadn’t thought about it. I’m not one to really track protein intake in my own diet. I think it’s in so many other things I eat, I don’t miss it here. :)

These look great! I love almond milk! I wish I had known about it when I was very young. I HATE dairy milk with a passion (unless it’s made into cheese) so I refused to drink milk in general and I maintain that is the reason i’m the shortest one in the family!

I’m an almond milk over soy milk girl myself too. Oatmeal has been my pre-workout breakfast lately, but pancakes are always a fav!
