Scenes from Staycation & New Year Eve {WIAW}

It’s back to normal life today for me today. I was lucky enough to be on vacation from the weekend before Christmas through New Years Day! That’s almost a full week and a half…and I loved every minute of it.

Instead of going somewhere for vacation, my family came to stay with us for the week of Christmas. It was a little weird not traveling, but I realized that it was a more relaxing experience than I expected. Not that every vacation will become a “staycation”, but I absolutely understand the appeal! Oh yea, and WAY cheaper!

We took my Dad & sister snowboarding at Breckenridge the day after Christmas – their first time riding anywhere outside of North Carolina. Other than the l-o-n-g mogul run we accidently turned down early in the day, it was a great day on the powder with snow coming down all day!

We also took them to Red Rocks and Boulder, so they could see more of the “Colorado Experience”. There were several breweries included in the tour, of course.

As much fun as it was to have them here, it’s always nice to go back to our little family of 2 (plus 2 dogs) and our own schedule. We took it fairly easy with workouts when everyone was in town, but we started back our normal training on Saturday!

So as things are getting back to normal, how about an old favorite WIAW review of a New Years Eve?! Jenn is always such an excellent host, I think it’s a very appropriate way to share the Wednesday of 2013.

Coconut-Dusted Pistachio Donuts :: 1/2 Clif Peanut Butter Crunch :: Fitmixer Aminos :: Vegan Crab Cakes topped with Vodka Mustard Sauce, Steamed Green Beans and Cranberries :: Gardein Holiday Roast, Mashed Potatoes, Peppered Collard Greens & Black Eyed Peas, Cranberry Sauce :: Schramsberg Blanc de Blanc and Applesauce Ginger Cake with Maple Glaze

Did you notice the vegan crab cakes? We found these while wandering through the frozen section at Whole Foods:

Vegan Crab Cake

They are made from a Japanese vegetable I haven’t heard of before and were very tasty, but not really crab cake texture. The sauce on top was something Kirk dreamed up and it certainly qualifies as #strangebutgood!

A quick and easy recipe for the sauce:

  • 1 tablespoon stone ground mustard
  • 1/8 teaspoon white pepper
  • 1/4 teaspoon Herbs de Provence
  • 1 teaspoon sherry vinegar
  • 1/2 tablespoon vodka

Yep – vodka! Just mix together and drizzle over a vegan crab cake, or whatever else sounds good at the time. :)

I think we had vodka on our mind, since it’s one of January’s Meatless Mondays from A-Z ingredients.

And finally, the dinner…

Originally, most of the dinner was bought for Christmas dinner, but we were never hungry enough for a big meal that evening. Lucky for us, we got to enjoy all this goodness ourselves! I have to mention the Gardein Holiday Roast – O.M.G! We had been getting the Fieldroast Roast for holidays, but after trying the Gardein version I have found a new favorite. The flavor and texture on this roast was great and both Kirk and I LOVED it! Kirk had seconds of that over sides on NYE! I would definitely recommend that to anyone looking for a plant-based holiday meal roast.

Looks like a great holiday! This was the first year I wasn’t traveling either and it was kind of nice, and kind of fun to help my mom get ready!

Vodka mustard sauce?! Strange but good indeed! Wish I’d seen this last night when I made a mustard sauce for my salmon.

I’m totally jealous of all that snow! But not the accidental mogul run. I’ve been there before… Very scary moment in my life. Haha!

I told him I wanted a strange sauce for your linkup and he delivered! :) The snow was awesome last week, I wish we could have gone more than we did. Very soft, lots of powder in the trees, and not too crowded. You need to come back and experience it, I think….

I had the same amount of time off work and it was ah-mazing! It’s hard being back at work today…
Glad to hear the Gardein Holiday Roast is so good. I’ve never had that but I’ve liked all of their other products I’ve tried.

I’m glad you had a nice long break too – it’s almost like being back in school….almost. I have loved all the Gardein products, I can’t believe that didn’t make me want to try the roast sooner! We used the crispy chicken for a buffalo chicken salad last week that was fabulous!

Oh it’s amazing to have family come over and visit. My family wasn’t really planning to do much for New Years until my uncle’s side of the family showed up 15 minutes to midnight ^^ Ended up having a second dinner late at night lol. There were roasted peppers, salmon, wine, some potato casserole, shrimp and egg salad, and this amazing chocolate italian cake. Quite a surprise ^^

Staycation?Heck yeah! When you live in Colorado, why would you need to go anywhere else? :) Ahhh I love Breck, but I’ve only ever been in the spring and summer! I’m sure it’s WAY different in winter (don’t know if I’m quite ready for all that yet!).
I NEED those vegan crab cakes. I make some pretty AMAZING ones, and I have to compare!
I’ve almost bought that field roast so many times… good to know that it’s so good!

Exactly – it’s like vacation every weekend already! Breck is a great place to learn to ski or snowboard…just saying. :) I don’t think these crab cakes will touch yours, but it’s always good to have options. And that roast you want to get is Gardein (instead of field roast, which is also good, but no where near as good as gardein).

I’ll have to try out those donuts since I got a donut pan for Christmas and they sound really good!

The best thing I ate on NYE was the salad bar box I got from Whole Foods. They had a bunch of vegan Indian dishes at the hot bar and I couldn’t pass them up!

Yay – donut pans rock!! Just make sure you use lots of cooking spray so they slip out easily. :)

Whole Foods bar always has some amazing things – especially the Indian dishes! It’s just fun to try lots of stuff there any day!

I had Friday-Tuesday off and did absolutely nothing and it was awesome! I mean, I hung out with friends, saw a movie, etc, but I didn’t go anywhere or do anything holiday-like.

NYE beverage was water. I’m lame! Although I had a beer earlier in the day. Really two beers.

I actually set a rule when we got married (over 11 years ago) that Christmas day is always at our house. Anyone is welcome to come, but we’ll be there. It is one of the best things we did – really makes the day special, instead of driving from house to house. It’s after Christmas that travel usually begins. :)

What a dinner! As soon as I saw “vegan crab cake” I was googling it. :) I looked up that root, and I haven’t seen it at the Asian market…of course I haven’t been looking. Apparently it is used as a substitute for gelatin, so I guess they probably include it more for consistency or holding everything together than flavor?
