Meatless Mondays from A-Z: Kale Sausage Balls

Sunday morning we had grand plans of sleeping in and relaxing. We enjoyed a night out on Saturday night and got in bed after midnight, so sleeping in sounded like a great idea! Instead, Kirk and I both woke up around 7am and admitted defeat around 7:30. Apparently we are not good at sleeping in anymore.

Instead of sitting in bed for too long, I decided to use the extra time to paint the room off the kitchen (which will eventually be a keeping room). Our house is very neutrally painted right now and I LOVE color!

I put on my painting clothes (yes, I really do have overalls just for this purpose) and got started. I picked up the paint a few weeks ago, I picked it to match a tulip picture that I’ve had for a few years and never had the perfect spot for before. I can’t wait to get it framed and hung now!

After the painting and cleanup was completed, I decided it might be time to figure out what Kale recipe to create. I wanted to something a little different, since I already cook with kale quite often. I had seen spinach balls on Pinterest earlier this week, which made me think of sausage balls. In the south, sausage balls are a common brunch treat, but my twist has a lot less cheese and a few extra spices. And kale, of course. ;)

Ingredients (28 Balls)

  • 2 cups kale, ribs removed and roughly chopped
  • 1 cup gluten free baking mix
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 2 Fieldroast apple sage vegan sausages, diced
  • 1 cup non-dairy cheddar shreds
  • 4 Ener-G “Eggs”

Instructions

Preheat oven to 350 degrees. Prepare two baking sheets by covering with aluminum foil.

Combine kale, onion powder, garlic powder, and sausages in food processor and pulse to crumble and combine. Transfer to medium bowl and add baking mix and cheese. Mix together with hands until fully integrated.

Prepare Ener-G “eggs” in a small prep bowl and mix vigorously with a fork until combined and frothy. Add eggs to mixture and stir well.

Kale Sausage Balls

With your hands, form 1 inch balls from the mixture and space 1 inch apart on the prepared baking sheet. Bake for 15 minutes and allow to cool slightly before serving.

I wouldn’t go so far to say these are a healthy breakfast treat, but they are much healthier than the traditional sausage balls! And they are so much fun to eat. :)

I have painting clothes too! There’s one pair of shorts I have that has the color of every room I’ve ever painted on them.

Your balls look delicious. Hee hee. I’ll start participating again I. 2 weeks. My cooking is less than exciting so close to competition. Boo!

Yum! I have made Spinach Balls before (sans sausage) and they were delicious, so I can only imgaine how great these must be…

I’m usually too lazy to paint any walls so I try to brighten them up with colorful pictures instead!

Love the color! Jason and I disagree when it comes to paint colors. I like bolds, he likes neutrals. We’ve kind of compromised and I did get a nice green foyer color that I love and a yellow kitchen. Most other rooms are neutral though.

I cannot sleep in as hard as I try. So sad.

Thanks Lee!! I’m glad Kirk enjoys brighter colors too, it’s my favorite way to make a house feel like mine. I even painted the walls in my apartment after college. :)

Oh my gosh- these look AMAZING!! I want to make them right this moment, but have forced myself to use up the veggies in my fridge first before running out and buying more. But, these will definitely be on the menu next week. :) I haven’t tried the field roast sausages yet- but I love the “lunchmeat.”
The color is BEAUTIFUL! Ugh, I hate painting, but it’s so worth it. This makes me want to finally get off my butt and paint my dining room. I’d have to strip the wallpaper first… ugh. Might save that for a rainy day.

Sausage balls! That IS a Southern classic–my best friend’s dad used to make the super unhealthy version every time she and I had a sleepover. Now I feel like I need to have a sleepover and make this healthier/grown up version in the morning.

Also, I LOVE that wall color. I went with neutrals in my house–with the exception of a lime green wall in my kitchen. Knew I had to limit it to just one or ALL my walls would be neon colors :D

I’m actually surprised to see that more people don’t know about them – I remember them being really greasy too (which these aren’t). We’ve gone through this batch pretty quickly!

Lime green is braver than I am, I love that it’s in your kitchen!

Yeah, the ones I remember definitely were–I think they were about 50% cheap cheddar and 50% Jimmy Dean-type seasoned “sausage” stuff. And they were delicious, of course.

And the lime green came out even better than I thought it would! I definitely knew I was taking a risk, haha.

I have painting clothes – a couple years ago I was in charge of remodeling the entire spa and medical clinic. This was new carpet, new hardwoods, new paint, new furniture – to keep within budget I painted some of the rooms myself (so fun!). I have an old pair of overalls too – just perfect painting clothes, right? :)
