Halloween Treats + Wicked Spicy Sausage Tacos {Recipe}

I don’t know about you, but I love holidays. Any holiday really, as long as there’s a good theme to sink your teeth into. Halloween is even better because you get to dress up in ridiculous clothes and it’s completely okay.
Unfortunately, I have been traveling on most of the Halloween weekends in the past few year so Halloween parties have been difficult to host or attend. But if I could have one this year, these are the treats I would serve!

So many good treats to choose from this time of year! But since I’m not going to a Halloween party anytime soon, Kirk created a taco recipe that is wicked good!
If you’d like to calm down the spice in this recipe, seed the jalapeno before chopping. For spice-lovers, the raspberries balance the spice and create a balanced blend of flavors with a spice the builds nicely as you eat.

Wicked Spicy Sausage Tacos

Wicked Spicy Sausage Tacos

Ingredients (2 tacos)

  • 15 raspberries, divided
  • 1 cup spinach
  • 1/4 cup coconut milk
  • 3 tablespoons honey (or agave), divided
  • 2 teaspoons shallots, chopped
  • 1 Fieldroast italian sausage, crumbled
  • 1 jalapeno, chopped
  • cooking spray
  • 2 flour tortillas

Instructions

Blend 10 raspberries with coconut milk & 2 tablespoons honey (or agave). Add spinach and remaining raspberries and stir to coat. Coarsely chop mixture.

Sauté crumbled sausage until warm.

Top tortillas with spinach mixture, shallots, jalapenos, and sausage. Drizzle remaining honey (agave) and serve!

Love that you use raspberries in the tacos – adding a little sweet in a traditionally savory dish is one of my favorite things to do.

I feel suddenly behind the game, as I have not made or eaten a single Halloween treat…nor have I opened a can of pumpkin. I love fruit and spice mixed in uncommon ways. Fruit salsas? Yum. Fruity meat? Yum. [OK, fake meat. But you know what I mean.]

For hard tacos, I prefer ground beef. For soft tacos, I prefer chicken. However, I realize that neither of these options fit your regular lifestyle and my current veg pledge. Soooo, perhaps I’ll just say beans. :)

Beans are good in tacos, nothing wrong with that. The quesadillas I had last night had beans, sweet potatoes, and other goodies – a very good combo indeed!

Sounds amazing, but I will be taking the seeds out of the jalapenos first. I like a medium spice, maybe even hot, but not too much.

Hello!

I just wanted to share that I made these tacos a few nights ago, and while the ingredients sound quite odd (a few co-workers winkled their noses), the flavor was fantastic. It’s not something I would eat every day, but for a night when I want something bursting with bright, bold flavors – I would make this again!
