Shamrocks & Seaweed on a Green WIAW

St Patty’s Day is this weekend, so it’s time to really amp up the Shamrock love on this week’s What I Ate Wednesday.

And since I’ve been eating SeaSnax like there’s no tomorrow, I may just turn into a piece of seaweed before we get to Saturday! These things really are seriously addicting – it’s a good thing I’ve started ordering a case as the start of each month. =)

Since I realized last week that I wasn’t eating my normal allocation of green veggies, I focused on getting more veggies in every meal. It’s been a successful (and delicious) week, but I must have been more focused on eating my food than photographing my food. Not as many photos to choose from as usual. :)

Collages1

1 – Veggie Quesadillas with Guacamole from Cans || 2 – Kale Salad (in many varieties) || 3 – My case of SeaSnax || 4 – Cozy Millet Bowl with Mushroom Gravy and Kale from Oh She Glows with a side of baby broccoli || 5 – Chipotle Seasnax || 6 – Tuna(free) Salad Sandwiches from Veganize It!

Don’t forget to head over to Jenn’s place (aka Peas & Crayons) to check out a few more green WIAW posts of the week! Did you link up this week?

And finally, a few St Patty’s themed recipes I’ve pinned recently, that you may want to check out! Okay, so I guess these are really mint-themed, but they seem St Patty’s-ish to me!

I’m not really a St. Patties day celebrater (I don’t hate, I just don’t partake) but I have totally been loving cabbage, so I suppose that’s St. Patties Day-ish, right? ;)

I don’t usually either, although since it’s on a Saturday, maybe I will this year. No cheap green beer for me, though! I think cabbage is definitely in the spirit – getting ready to make reuben rolls tonight, in fact. :)

I love those seaweed snacks too. People at my last job used to make fun of me because they said they were gross but I think they taste like sushi, which I also love.

They aren’t quiet either, it’s hard to eat them without a crunch with every bite. :)

I don’t usually do anything for St. Patrick’s day, but this year I think we’re going to go have an Irish breakfast and then just chill for most of the day. I also need to increase my intake of green vegetables. I just don’t like leafy greens that much but I know how good they are for you.

A relaxing day is a bit of a celebration in itself. I can’t believe you don’t like green veggies, I would have a hard time forcing myself to eat them. I have to enjoy my food. :)

I forgot to tell you! I looked at the price of the alternate SeaSnax at YDFM – they were $1.29 for a pack of 3. No chipotle flavor… but the wasabi is awesome.

Shamrock shakes have me curious… but I just don’t think I can get into mint-y desserts.

WOW – even cheaper. I can feed my addiction from multiple sources that way! :) Between seaweed snacks and kale salad, I think I might turn green.

Ha! You’ll turn green and I’ll turn orange.

I’ve been wanting to try millet. I bet I’d like it.

As for St. Patty’s, I was thinking of making soda bread, but now I’m not so sure. I’m kinda’ lazy, and I’m not sure anyone would eat it (except me of course!)

I have a new cotton dress that is very green and perfect for fun on Saturday after my race – that’s my green contribution. I used to love Guinness, but I don’t drink that anymore (yucky refining with fish bladders) – I’ll have to pick a new Irish drink this year. :)

Thank you so much for this awesome shout-out for F&B, Heather!! I cannot wait to try Kris’ Baileys. I have had in on my Pin Board, collecting dust. Looks like now, if ever, is the best time to do so! xo
