Kale Chips for Everyone!

One of my favorite snacks, which I only discovered this year, is Kale Chips. Melody actually introduced me to these long before I even started eating changing my diet at all. I’ll admit that this is probably not something I would have tried making on my own for the first time, but that’s such a shame. Kale Chips are a great way to sneak in a serving or two of veggies and they taste amazing!


I have been known to make a big batch out of a bunch of kale and eat the entire thing by myself in one sitting. :) Who needs popcorn, I eat this when watching movies instead!


Basic Kale Chip Recipe

Ingredients (serves 2-4)

  • 1 bunch of Kale (any variety)
  • Olive Oil Cooking Spray or Olive Oil
  • Salt
  • Pepper


Preheat oven to 350 degrees.

Wash and dry (pat with paper towel) Kale Leaves.

Pull Kale leaves off the ribs and tear into bite-sized pieces. Don’t worry about making the pieces uniform, just small enough that you will be able to fit them into your mouth.

Lay Kale pieces in single layer on cookie sheet coated with cooking spray, dark side facing up.

Spray Kale lightly with cooking spray (or sprinkle with olive oil if you prefer). While still wet, sprinkle with desired amount of Salt and Pepper.

Bake for 10-15 minutes or until dry and crispy.

A couple of tips for your first few batches:

The first time to make Kale Chips, I suggest checking the chips often to figure out the best cooking time in your oven. Oven heats seem to vary, especially in different parts of the country, and you do not want to over cook these.

The pieces may finish at different times. I typically open the oven and tap the pieces sideways to see if they are done. You don’t want any moisture left and you can always take off any pieces that finish early and cook the remainder.

Curly Kale seems to cook faster than the flat varieties, so adjust your cooking times based on the ones you have.

Once you’ve got the basics down, there are a million ways you could tweak this recipe to alter the flavor. Think of your favorite flavor of potato chips – you can replicate that with Kale Chips!

Some of my favorite variations:

  • Salt & Cracked Red Pepper: replace the black pepper with Cracked Red Pepper for a bit of a spicy kick.
  • BBQ (Peas & Thank You Recipe)
  • Sour Cream & Onion (Thrive Recipe, shared on One Green Planet)

Once you discover the joys of Kale Chips, you’ll find yourself grabbing and extra bunch of Kale every time you’re at the store. It’s crazy how good these are and Kale is an excellent source of vitamins K,A, and C. Tasty and healthy – how can you not love these?!
