Last week, I started a recap of some of the amazing recipes created during the first round of Meatless Mondays from A-Z.
The first 13 recipes reminded me of several recipes I still want to make, plus a few that I’ve already made and enjoyed at home! I hope you discovered a few to add to your list too.

Before we get to the final 13 recipes, I want to recognize two amazing MMAZ participants who really rock! These ladies created a recipe for every letter of the alphabet – from Artichoke to Zucchini. So much deliciousness! Sarah’s whipped cream creation blew my mind. And I want Kristina to make me a drink. Wpuldnt we have the most epic dinner party?!

Whoo hoo! Thanks so much! I LOVED this whole idea, from concept WAAAAY back when, to implementation. It really kept me motivated to be creative in the kitchen. I can’t wait for round two. :)
I did not celebrate St. Patrick’s Day…although I have red hair, I am not Irish, so instead I watched Brave and celebrated my Scottish heritage.

Ooh – I LOVE your rueben rolls, wish I had thought of those! And I still do need to make that Irish Cream. Seriously, I think you should always make extra and ship it to me.

I’ll say it again…I’m SO glad you did these recaps! I was so overwhelmed with stuff on the second half of the alphabet…it seriously pained me to see yet another letter go by each week without getting to participate! I give major props to our two rockstars…and you too…for coming up with such inspiring and CREATIVE recipes! (and if there was anything bigger than all caps to further express that statement, you better believe I’d be all over it! ;)) This just reminds me how much I drooled and pined over Sarah’s apple pie whipped cream! Gah, I really need to make that!
