in Food, Meatless Monday A-Z

Last week, I started a recap of some of the amazing recipes created during the first round of Meatless Mondays from A-Z.

Meatless Mondays Highlights

The first 13 recipes reminded me of several recipes I still want to make, plus a few that I’ve already made and enjoyed at home! I hope you discovered a few to add to your list too.

Before we get to the final 13 recipes, I want to recognize two amazing MMAZ participants who really rock! These ladies created a recipe for every letter of the alphabet – from Artichoke to Zucchini. I’m sure you’ve seen many of their amazing creations over the weeks. To recognize their rockstar status, I’ve created the Meatless Mondays from A-Z Rockstar award especially for them -

MMAZ Rockstar Award

Thank you both for your amazing support of MMAZ!!

Now it’s time for the second half of the alphabet – which started last November and wrapped up at the beginning of this month. As a reminder, we’ll start the second round on April 1st, so stay tuned for all the details and the first group of ingredients!

Get ready to drool…

Whoo hoo! Thanks so much! I LOVED this whole idea, from concept WAAAAY back when, to implementation. It really kept me motivated to be creative in the kitchen. I can’t wait for round two. :)

I did not celebrate St. Patrick’s Day…although I have red hair, I am not Irish, so instead I watched Brave and celebrated my Scottish heritage.

I celebrated with my vegan reuben rolls… and my homemade Irish cream. not at the same time…

THANK YOU girl! for the rockstar designation and for this fantastic idea – the best weekly linkup idea I have ever seen! I have had so much fun, as you know, and cannot wait to get started again (I am not impatient, I REALLY have enjoyed and needed this break!)

happy Monday!

Ooh – I LOVE your rueben rolls, wish I had thought of those! And I still do need to make that Irish Cream. Seriously, I think you should always make extra and ship it to me.

And girl, you EARNED that rockstar designation. I appreciate your support of MMAZ more than you know. :)

I’ll say it again…I’m SO glad you did these recaps! I was so overwhelmed with stuff on the second half of the alphabet…it seriously pained me to see yet another letter go by each week without getting to participate! I give major props to our two rockstars…and you too…for coming up with such inspiring and CREATIVE recipes! (and if there was anything bigger than all caps to further express that statement, you better believe I’d be all over it! ;)) This just reminds me how much I drooled and pined over Sarah’s apple pie whipped cream! Gah, I really need to make that!

Hopefully (surely…please God??) I’ll be back to my kitchen dancing by April 1st because I can’t WAIT to see what’s up for the next edition!

I’m so glad that you enjoyed them. I know what you mean about being overwhelmed and missing out, I’m so out of touch with my favorite bloggers right now, it’s been a crazy few weeks and it’s so easy to get bhind.

And I’m so glad to hear you’re hoping to join more often for the next round – I love seeing what YOU come up with!
