What I Am Eating This Week

In a typical week, I cook a lot of recipes I find on other people’s blogs. I plan for open spaces on the meal calendar that I can create new recipes when the mood strikes me. And of course the weekly recipe creation for Meatless Mondays from A-Z.
 
I’ve shared a roundup of other people’s recipes once before and I’d like to do it more often. There are so many recipes shared online, I like to give credit when some jump out at me and make it to my shopping list.
 

Recipes Planned This Week

Breakfast

  • Green Smoothies are on my regular breakfast rotation – this week we have pineapple, rhubarb, blueberries, strawberries and bananas to choose from each morning.
  • Early Morning Peanut Butter Banana Oatmeal from Oh She Glows. I’m making mine by throwing everything in the rice cooker. I really push the limits of that tool, but it works!

Lunch

Dinner

Snacks

  • I recently got a 3 different bags of Healthy Bites from the amazing Lindsay, so we’re trying to savor them and eat just a few at a time. I got a batch of Gingerbread, CranSugar Cookie, and Marmite PB Caramel. All vegan and all fantastic!
  • Crunchy Roasted Lentils from Ashley – munchies at work!
Whenever I make a weekly meal plan, I know that typically it will shift around and work over a few weeks. There are times where our plans change and we go out to eat or make more random meals.

Heather’s mac & cheese might have to make my meal plan in the near future. I miss macaroni & cheese so much and just got my hands on some nutritional yeast!

I can’t wait to try it – it’s so different than my version, which is one of the reasons I’m looking forward to it! You’re going to get hooked on nutritional yeast – it’s amazing stuff! :)

We always have a little flexibilty with our meal plans, but I do a pretty good job of sticking with it because I’ve already done all the grocery shopping. That makes it so easy!

I’ve roasted chickpeas before, but never lentils. Very interesting–I can imagine they would be a fantastic snack!

Pinterest is my pre-planning and I love it! Plus I’m so visual it helps me remember why I wanted to eat something. :)

All of these are on my to-make list too! Especially Kristina’s Dal. I was going to make it this week, but the tummy flu thing is preventing me from wanting that texture. LOL!

Ugh..tummy flu is bad enough without messing up your foodie plans! I can’t wait to make those peppers, we should probably cook the beets soon so we can be ready for it!

Oatmeal in a rice cooked= genius! My grandpa makes buckwheat and millet in a rice cooker too and I use it to make greek yogurt. Such a useful tool!

I try everything in the rice cooker, can’t believe everything has worked so far! I can’t believe I have only had one for a year, it’s such a fabulous contraption. Or maybe that’s because I get a little lazy/rushed. :)

YUM! Lots of good links in there, Heather! And oatmeal in the rice cooker? Love it. Kind of like how I push the limits of my blender. ;) My in-laws are away right now so I’m enjoying using their juicer for a few meals/snacks a day and am back on the juicing train! Trying to focus on not snacking too – well, not mindless snacking, anyways. Too many get-home-and-am-tired-and-hungry-so-I-grab-handfuls-of-cereal were going on for a while there. ;)

Thanks for sharing! Keep eating well! (ps – I miss you! …yet I’ve never met you!…you going to BLEND?) :D

Exactly how you push the blender – hey, that’s what these tools are for, right? I’m so jealous of your juicer access, that’s something I’d love to try. Do you feel like you’re spending a ton of money on fruits & veggies to make the juice?

Miss you too – I was just thinking we hadn’t caught up as much recently. I will ABSOLUTELY be at BLEND, no question there. I may not be joining in all the active events, because it’s my last big week for Ironman and I don’t really want to do “new” stuff. Still have to figure out how to fit everything in that week (would typically be a 100+ bike/6 mile run on Saturday and 20+ mile run on Sunday…). But seriously – not missing Blend. :)

I loosely plan my meals for the week based on what’s in the fridge,and while I don’t always stick with it, I know those options exist. It cuts down on me standing in front of the fridge on Wednesday night at 6:30 going, alright what’s for dinner tonight.
