Highlight of my week was definitely an ice cream brownie cake I made my dad for his birthday! It was a total hit and DELICIOUS!

Fun pictures!! My favorite fitness highlight so far this week was yesterday’s successful run, followed by some strengthening that had me feeling a bit sore this morning. Score! :)

Easy peasy – you can make it! It’s my nacho cheeze (with chipotles instead of tomatoes), chips, black beans, lettuce, non-dairy sour cream, and salsa! See – easy! :)

I LOVE that you’ve seen most already. I tried to find some I hadn’t shared too – apparently I overshare. :) And you can make those nachos easily: It’s my nacho cheeze (with chipotles instead of tomatoes), chips, black beans, lettuce, non-dairy sour cream, and salsa!

The salad picture is something I threw together for dinner one night – it’s kale, pear, red pepper, black beans, and a marinade that I can’t remember! I make kale salads on the fly too often without writing down the recipes. :)

Yay – more photos are fun! The Hostess Cupcakes were divine. I get so excited about vegan desserts, just because they are hard to find, but we do have some great places in Colorado that make them.

Yum, I would totally much those healthy nachos with the blue corn chips, black beans and nacho cheez. And the kale salad. Fitness highlight for the week: definitely the ice dance test I just passed today. Feeling happy and relieved, it went much better than I’d thought it might.
