Merry Christmas Eve!! I hope your Christmas shopping is all done, because time is almost up! More than that, I hope you’re getting to spend time with your family today, instead of on the hunt for the perfect gift.

Either way, I have a quick roundup of the Meatless Mondays from A-Z recipes! If you’re new to MMAZ, check out this post for all the details. Or the short version: I pick a key ingredient each week and everyone creates a meatless recipe including that ingredient. It’s a fun way to inspire you to try something new!

these next letters are difficult –

saffron? sage? for S.
taro for T!
udon for U? or umeboshi plum!
vermouth for V.

I liked your vermouth idea until vodka was suggested, I think that might win. :) I am glad we had a few weeks to give my brain a week, but now I’m getting excited about the next month of letters!

and I honestly cannot believe I did not suggest vodka!! I definitely think you should go with vodka. I may have more than one entry that day ;)

I remember when you sent out the original interest e-mail about this, and I am SO glad that you ended up going through with it. I have loved this challenge, and it really has kept me creative and cooking in the kitchen, at a time when I’ve started to slide into ‘same old’ ‘single girl’ foods. Cheers to the rest of the alphabet…and perhaps starting over again?

T–Tamarind? Tapioca?
U–I like Kristina’s suggestion of udon!
V–Vanilla, VEGEMITE!
W–Walnuts?
X–Xantham Gum? Xylitol sweetener?
Y–Yucca? Yams?
