There are so many wonderful, talented bloggers that I have discovered over the last year or so. You can find many of them on my “Blogs I Follow” page, if you are interested.

Over the past few weeks, I’ve made several recipes I’ve found on blogs and they have all turned out great!

Yay – yes!! I am drawing a complete blank on beets, so I need to put my thinking cap on. I’m REALLY excited about the recipe I’m sharing tomorrow and I *think* it’s gluten free for you too. :)

I LOVE artichokes but honestly find them to be a pain in the rump to cook.. All that trimming and boiling… And I think canned ones are kind of gross……. So ummmm… I look forward to these recipes and maybe some shortcuts! :)

I included my cooking method in tomorrow’s post just for you, because I think it’s relatively easy the way I do (just takes time). You’ll have to let me know.

I did use the canned ones in my recipe though – not gross. :)

I have to be honest.

I rarely make other people’ recipes.

I look at the pretty pictures and the ingredients but either I get lazy or I just end up making my own version of a thousand things I’ve seen.

I really blame this on genetics. My dad is the same way. I’m pretty sure when I was in the womb he was speaking to my mom’s stomach saying, “Recipes are for losers.”

Not that I think you are a loser.

OK. Taking foot out of mouth now.

We ate them for 3 meals in a row, a little different preparation each time – fantastic!! The mini-springform pans are awesome. We don’t own a big one. :)

The Daiya was perfect, it melts just like cheese in the wedge form. Yum!
