I’ve been buying a lot of these Sandwich Thins for just this purpose! It’s not quite as heavy as bagel or even a slice of bread, the perfect compromise for a quickie as I head out the door. Before my run, I topped it with Earth Balance Coconut & Peanut Spread and Vegemite. Protein & Energy to go!

Dinner
I finally went grocery shopping after work & strength training, so I was going to make a new recipe for dinner. After peaking in the fridge, I saw that I still had one more serving of the chikin nuggets & fires, plus quinoa basil bean burgers. I decided to minimize my time in the kitchen by finishing up these leftovers and cooking lunch for the rest of the week instead. I used the rest of the basil aioli to dip the nuggets and fries in too. Nothing wasted here!

In other news, I had to share the pricing announcement from HITS that was announced yesterday. HITS is a newer series, with 2012 being it’s first full year. They offer 4 distances of triathlons on every weekend they put on a race – sprint, olympic, half, and full distances! It’s an interesting concept, since it really allows friends and family of all abilities to get together and race at the same venue on the same weekend.
When it was announced last year, I was disappointed to see the pricing structure pretty similar to Ironman. But with this announcement, it’s a HUGE differentiator. You can now race an Ironman-distance race for about $150, as long as you register 4 months in advance. Since most people sign up for Ironman distance race a year in advance, this is amazing deal. The Ironman I registered for in Australia is significantly more than that. I saved for months to have enough to pay for race registration.
Although I am typically attracted to international races, this is enough to get even ME interested. Kirk and I are looking into the Napa race as a possible Half Ironman race to prepare for Ironman Cairns next year. I hope this event continues to catch on, because it would be great to add price competition to the Ironman-branded races. They are outrageously expensive!
Does this low-cost option change your interest in triathlon – especially long-distance?

Wow…that is an amazing deal on the ironman races. You should definitely take advantage! I can’t even imagine racing in a tri…I have so much admiration for you!
All of your meals look delicious! Sometimes I actually like when I’m running low on food…it forces me to get creative with what I already have and it’s the perfect way to clean out my refrigerator and freezer!

I did the exact same thing last week! I actually did a little freezer “shopping” and found some salmon filets I didn’t even know were in there…made for a great weeknight dinner with my roasted zucchini sprinkled with nori rice seasoning (that stuff is like crack!).
I’ve still yet to find that Earth Balance spread…though I have had Tropical Traditions coconut pb…ahhh, sweet precious memories! I honestly have no idea HOW I managed to make that jar last for as long as it did! Lol I’ve never thought of trying a sweet pb spread with Vegemite though…now you’ve got me curious!
I’ve been eyeing Kristina’s burgers for weeks now! They’re on my (ever growing) list of things to make, but I told myself I have to make Lauren’s beet burgers first! So I bought beets yesterday! :D …I’m trying to take a cue from you and get better about actually MAKING recipes instead of just drooling over them!

I love leftover days! Some of the most fun meals I’ve made are when I ‘m trying to clean out the fridge. Which makes me think of when you moved… did you guys ever eat all that cheese dip? LOL!

Still no interest in a triathlon, but that’s probably because swimming and biking are two of my least favorite things, and I’ll only run if I haaaave to. But holy cow, that just means I admire you and anyone else you can do one that much more! And oh my gosh, those random recipes you don’t write down/pay attention to what you’re putting in? They kill me, because they’re always the best and never come out quite the same again…

Leftovers are the BEST! I love having leftovers!!! I have never had the coconut pb or Vegemite. I need to try them! I would die trying a triathlon. You are a machine girl!

I’m usually really good about eating everything in my fridge. The food I hoard in the pantry, however? That is an entirely different story.
Have you tried the CRUNCHY coconut/peanut spread? I thought I didn’t like the stuff after trying the creamy, but OH MY GOLL that crunchy is so crammed with nutty goodness…
