Today is a special day – it’s the day before Thanksgiving – hooray! It’s also a WIAW that I actually thought about and had some delicious food with pretty pictures for your enjoyment! A great combo, if I do say so myself.

Breakfast
I woke up about 30 minutes before the alarm went off and did something I’ve been saying I needed to do – I got up! I usually try to go back to sleep and then feel exhausted when the alarm goes off, instead of feeling refreshed when I wake up alone. It’s crazy, but I feel like I need less sleep to be refreshed since switching to a plant based diet (and I love my sleep!).
So, I put my awakeness to good use and made Jess’ delicious Pumpkin Scones for breakfast! While they were baking, I did a 20 minute yoga session for 30 Days of Yoga (with a quick pause to pull them out of the oven). Once they cooled (and yoga was over), I drizzled the spiced glaze on the top. Unexpected breakfast in bed for my hubby – I earned brownie points this morning! :)
Lunch
Today’s lunch was actually a repeat of yesterday’s lunch – thank goodness, because it was delicious. Lunch was Gena’s Sweet Potato and Beet Nori Rolls and Christine’s Creamy Mushroom Soup.
I thought I ruined the Nori Rolls when I really overcooked the beet when I tried to save time by microwaving on Sunday night. Despite my stupid mistake, the overall taste was fantastic – it just didn’t look nearly as pretty as Gena’s photos.
The Creamy Mushroom Soup was fabulous – all the crispy broiled mushrooms on top (and them mixed in) were so flavorful. I really enjoy the texture and flavor of mushrooms!
Snacks
This week’s (un-pictured) snacks were a bag of mini Oreos from Halloween (only two left!) and about 5 chips and salsa while cooking before dinner. I did go for a 6 mile run in between these snacks, so I needed some calories. :)
Dinner
I did not make dinner tonight….Kirk did! I pressed the tofu (our sophisticated, between two cutting boards with a stack of cookbooks method) before I left the house this morning. He then marinated it starting from about 10:30AM – the longer the marinade, the better the flavor (in my opinion). When I got home from my run, he was chopping away – yay!
So while I started prepping for Thanksgiving, Kirk made this fantastic Crunchy Tofu Salad for dinner. I think this is my favorite new tofu dish – simply amazing. The tofu was so crisp and crunchy, I’ve never had anything like it. We both had to hold back from eating another serving, because we weren’t really hungry – it was THAT good. Seriously – go make this now!
The wine in the photo was a bottle we picked up when All Ya’lls went out of business a month or so ago: Les Tuffeaux Montlouis Sur Loire – a crisp, slightly fruity white loire table wine. Yum!
Dessert
I’ve been wanting to make these for a while and this week I decided it was time! These are IsaChandra’s Peanut Butter Chocolate Pillows, but I loved the visual instructions on Oh She Glows – so I had both up while preparing these.
These got rave reviews from Kirk and GW. Really delicious, not too tricky to make (much easier than it looks) and beautiful result. If any of these last to Thanksgiving, I’ll be bringing these to share with the group. A great way to share how delicious non-dairy, egg-free baking really is!

The crispy texture of this one reminded me of the country-fried tofu at Whole Foods (if you’ve ever had that). Yum Yum, indeed!
Ooohhh I haven’t tried that dish from Whole Foods yet! It’s always a treat for me to be able to eat there…the closest one is a ferry ride (read: 2+hrs and $100) away :( I will try that next time, though!

Oh wow – that is a special trip! I’ve actually only eaten there once so far, but that tofu sticks out in my mind.
I have those nori rolls book marked to try, but I’m a little intimidated by rolling my own. One day when I’m feeling adventurous…

I forgot to share that we used Panko instead of traditional breakcrumbs for the tofu.
great – that’s what i’ll likely use anyways. love the added crunch from panko!

Want to come make breakfast in bed for me? That looks amazing! Heck…all the food looks so good. I’ve never managed to get tofu that crispy. Sounds perfect and I will have to look into it!

Hahaha..breakfast in bed doesn’t happen very often around here either. :) I was amazed at the crispyness of the tofu – let me know it turns out if you try it! I think you use that tofu mix as a base for many-a-recipe.

I have marinated tofu for several days once and it was incredible — I don’t typically plan that far ahead though. :)
I rarely manage to plan that far ahead too!!! When I have marinated overnight it was great. Yet a 20 minutes marinade session for tempeh or tofu can be satisfactory!
